Grilled Jalapeno Chicken
* 1/3 cup fresh lime juice
* 1/4 cup of honey
* 2 tbsps fresh cilantro {I did not use this because I didn't have it}
* 2 tbsps soy sauce
* 1/4 tsp salt
* 1/4 tsp pepper
* 3 jalapeno peppers {halved and seeded}
* 3 garlic cloves {I used jarred minced garlic}
* 36 ozs skinless chicken breasts {you can do whole breast or kebab}
* cooking spray
1. Place first 8 ingredients in a blender; process until smooth (or chop fine)
2. Combine lime juice mixture and chicken in a large, heavy-duty, zip lock plastic bag.
3. Seal bag and marinate chicken in refrigerator 1 to 8 hours. 4. Prepare grill and spray with cooking spray. 5. Remove chicken from bag, reserving marinade. 6. Place chicken on grill rack; cover and grill 12 minutes on each side or until done, basting occasionally with the reserved marinade. I had planned on making kebabs but totally spaced soaking the sticks so I figured, oh well, chunks will be fine. |
Now I know why they use sticks...I kept losing pieces to the bottom of the grill { I will remember this next time}
Not knowing for sure how spicy this would be, I threw a plain breast on for Isabelle..

This was really, really good. It was not too spicy {which is most likely because I only had 2 jalapenos} so I would let Isabelle eat it next time.
So, fast forward to the next night...
I took all the leftovers from the night before and decided to make a wrap.
lettuce{tossed in dressing}, red onion, chicken, shredded cheddar cheese |
then some bacon pieces and cranberrys |
When all was said and done, I overstuffed the tortilla and ended up eating it salad style off of the plate. Isabelle had her own version as well... |
So, that's it!! I took Sunday nights grilled jalapeno chicken
and turned it into a jalapeno chicken wrap the next day.
I have a little bit left and I see come nachos in my future :)
